Culinary Flagship Project
Mathias Schattleitner, Managing Director of the Schladming-Dachstein region, emphasizes the philosophy behind collaboration with Richard Rauch: “We are consistently working to establish Schladming-Dachstein as one of Austria’s leading culinary destinations. Alpine Cuisine by Richard Rauch, now entering its seventh summer, is our flagship project. It combines regionality with creativity while remaining authentic and affordable.” In the spring, new and innovative Alpine-style dishes are perfected in collaborative workshops. The ingredients are primarily regional, and in many cases even homegrown and -produced.

Schladming-Dachstein Culinary Partners
When the Schladming-Dachstein region talks about its Genusspartner (“culinary partners”), it currently refers to 20 local farmers who market directly to consumers, five small-scale food producers (bakers and butchers), and 45 hospitality and accommodation businesses. What unites them is their passion for regional foods, which they either produce, refine, or process: meat, cheese, yogurt, potatoes, honey, distilled spirits, Ennstal Steirerkas (an iconic local cheese), and much more. Mathias Schattleitner emphasizes: “Our Schladming-Dachstein culinary partners demonstrate how all players in the value chain can work together to create added value both for our guests and their own businesses. This is what regional collaboration is all about!” All Schladming-Dachstein culinary partners adhere to clearly defined quality standards and are regularly evaluated by external inspectors.

Event “One Evening, Five Chefs” Showcasing the Region’s Diversity on a Plate
The events of “Alpine Cuisine by Richard Rauch” continue to evolve with new, innovative ideas. In spring 2025, the first edition of “One Evening, Five Chefs” took place at the Höflehner Nature & Wellness Hotel. Together with Richard Rauch, four local chefs created a five-course tasting menu paired with Styrian wines from the STK Weingut Lackner-Tinnacher estate. Almost all the ingredients came from the Schladming-Dachstein region. The next edition will take place on September 16, 2025 – the venue has yet to be confirmed.
